Wild Pacific Halibut with Goodly Tomato Coconut Soup

Chef’s Note:
An easy, economical and delicious way to enjoy wild Pacific halibut!

 
  • 1 - 500 mL container Goodly Tomato Coconut Soup

  • 1/4 cup - water

  • 1 cup - small cauliflower florets

  • 1 - medium tomato, cut into 8 wedges

  • 1 cup - spinach leaves, packed

  • 1 - 8 oz Wild Pacific Halibut fillet, cut into 1-inch cubes

  • salt and cayenne pepper

  • cilantro for garnish, if desired

  • hot cooked white rice, if desired

DIRECTIONS

  1. Place the soup in a small pot. Stir in the water and bring to a boil. Add cauliflower, cover, turn to a simmer and cook for 3 minutes.

  2. Stir in the spinach and Wild Pacific Halibut, cover and simmer for 3 to 4 minutes until the halibut is firm.

  3. Stir in the tomato and heat through.

  4. Season to taste with the salt and cayenne. Garnish and serve immediately with rice if desired.
